Filmjölk is a fermented milk product made using specific mesophilic lactic acid bacteria (primarily Lactococcus lactis and Leuconostoc mesenteroides ). Unlike yogurt, which ferments at high heat (110-115°F / 43-46°C), Filmjölk ferments at room temperature (68-78°F / 20-25°C).
